DAY 1 - From the border to Ensenada for a day of eating the best tacos and seafood…
8:15-8:30am: Meet your bilingual culinary guide and driver at the designated meeting point on the US side of the US-Mexico border in San Ysidro, California (the San Diego to Tijuana border crossing). It's an easy drive to the meeting point, or take public transportation (San Diego Trolley), taxi, or Uber.
8:30-9:00am: Cross the border on foot with your guide through Mexican Immigration and Customs to our well appointed tour vehicle waiting on the Mexico side of the border.
9:00-10:30am: Drive to the Mexican port town of Ensenada for a day of eating (stop for restrooms as necessary).
10:30-11:00am: 1st Stop: Birria is a braised meat stew famous in Mexico for being the perfect hangover cure, but was traditionally served for breakfast to peasant farm workers before a long day working the fields; we’ll start the day off right by sampling “tacos de birria” (beef, lamb, or goat) at Ensenada’s iconic birria joint
11:00-11:15am: Drive to our second stop for Ensenada’s best fish tacos
11:15-11:45am: 2nd Stop: Visit one of the most famous fish taco stands in this town that gave birth to the Baja-style fish taco (eat fish tacos, street-side, and learn the history of this famous snack; note that fish tacos are considered a breakfast food in Mexico, and should be eaten first thing in the day to ensure freshness)
11:45-12:00pm: Drive to our next stop for some of the best “mariscos” in the world (freshly prepared seafood)
12:00-12:45pm: 3rd Stop: Visit the seafood cart/restaurant that Anthony Bourdain proclaimed "the best food cart in the world" (eat a freshly prepared ceviche tostada; we need to be here early, because the line can get long later in the day)
12:45-1:00pm: Drive to our next stop at the oldest continually operating saloon in Mexico
1:00-1:45pm: 4th Stop: Visit the iconic cantina where Mexico's most famous cocktail, the margarita, was said to have been invented (drink a classic margarita and enjoy being serenaded by mariachis music at this turn-of-the-century landmark)
1:45-2:00pm: Drive to our next stop at one of Mexico’s top craft breweries
2:00-2:45pm: 5th Stop: Have a taster flight of craft beers, with a fantastic view of the Pacific, at one of Mexico's best craft breweries
2:45-3:00pm: Drive to our last food stop for the day, a famous roadside taco stand on the outskirts of town
3:00-3:30pm: 6th Stop: Visit an iconic truck-stop taqueria on the outskirts of town, famous amongst locals, truckers and surfers alike (eat a street-style "al pastor" pork taco carved right from the spit or a wood-fired "carne aside" taco)
3:30-4:15pm: Tummy full, and pleasantly buzzed, sit back and enjoy the picturesque drive to your elegant ocean-front hotel located nearby the Valle de Guadalupe (you may choose a different hotel/location, based on availability - prices vary according to accommodations selected and time of year)
4:15-5:00pm: Check into your hotel room and freshen up before drinks and/or dinner (dinner, if you are still hungry, after a day of eating at or near your hotel is not included in this tour’s base price; you may choose to add dinner to your itinerary when making your tour reservation during checkout - dinner prices vary according to the restaurant selected, and is based on availability)
DAY 2 - Wine tasting and gourmet lunch in the Valle de Guadalupe before returning to the border…
9:30-10:00am: Have breakfast at your hotel and complete your check-out by 9:30am, then meet your Baja Test Kitchen culinary guide and driver, who will load your overnight bags into the tour vehicle before departing for another day of wine and food in the Valle de Guadalupe
10:00-10:30am: Drive to your first winery stop in the Valle de Guadalupe
10:00-11:30am: Winery Stop #1 - Enjoy the morning sun from your table overlooking the vineyards as you taste award-winning French-inspired boutique wines at this small family-owned winery nestled way back into a discrete corner of the Valle de Guadalupe; most people don't know about this hidden historic vineyard that was once owned by Mexican President Rodríguez! In addition to being one of the top boutique wineries in Mexico, this winemaker also produces and sells award-winning organic cold-pressed olive oil from their own historic orchards - be sure to request a tasting and buy a bottle!
11:30-12:00pm: Drive to boutique winery #2
12:00-1:00pm: Winery Stop #2 - Enjoy a full-flight of artisan wines while noshing on local artisan cheeses and organic cold-pressed olive oil right in the vineyards at one of Mexico’s top micro-wineries. This very small family-run winery that specializes in bold handmade Napa-style wines is one of the top wineries in Mexico, with several of their wines having been selected by the French Laundry in Napa Valley for inclusion on their wine list.
1:00-1:30pm: Drive to Lunch
1:30-3:00pm: Gourmet Lunch Stop - Sit down for an expertly curated multi-course campestre-style gourmet lunch served "al fresco" overlooking the vineyards at one of the region’s top-rated outdoor eateries; our first-hand knowledge of the local culinary movement will shine through as you taste from multiple dishes that truly represent the best of Baja California gastronomy; with Baja Test Kitchen as your culinary guide, your dining experiences are sure to be one of the memorable highlights of your trip (curated multi-course tasting menu with share plates served family style; non-alcoholic beverage included; local wine & beer available for extra purchase; blankets available if it's chilly).
3:00-4:30pm: Tummy full, and pleasantly buzzed, sit back and enjoy the picturesque drive back to the border in Tijuana, Mexico (stop for restrooms as necessary; if you met your tour at our designated border meeting point, your guide will drop you off directly in front of the entry to the pedestrian border crossing where you will cross by foot back into the U.S.).
4:30-5:00pm: After clearing U.S. Immigration and Customs, walk back to your car parked in San Ysidro, California, or catch the San Diego Trolley, taxi, or Uber (while most of our groups usually experience just 10-20 minute crossing times, your arrival time in San Ysidro is highly dependent on the actual border wait time on the day of your tour, which may vary - BTK has no ability to affect actual border wait times).
*This is a sample itinerary; after paying your reconciliation invoice for the full cost of your tour (see details below), you will receive an email with your actual itinerary including any customizations you have requested and links to the boutique wineries and restaurants you will visit on tour. Baja Test Kitchen will select the wineries and restaurants for your itinerary, noting that we only work with Mexico’s top boutique wineries and the region’s best farm-to-table restaurants. Specific vendor requests (wineries, restaurants, venues, etc.) cannot be guaranteed, however we will make reasonable attempts to fulfill your reasonable requests - additional costs may apply for some vendors - inquire for details and pricing via the booking form. Please understand that our winery and dining partners are independent businesses and we ultimately have no control over their availability, cancellations, and other inconveniences imposed by them. We work with most of the top wineries, restaurants, and venues in the Region, and if we must substitute a vendor or vendors on your itinerary, the overall quality of your experience will not be affected.
RESERVING & CONFIRMING YOUR TOUR DATES - HOW IT WORKS
We Charge a Non-Refundable Date-Hold Deposit - Scroll Up to Reserve Your Tour Dates Now. During the booking process, you'll specify your group size and requested tour start date, and if your requested tour dates are available, we'll confirm your requested dates within 72-hours of receiving your date-hold deposit payment. If your requested tour dates are not available (and you have not specified an alternate tour start date), we will refund your entire deposit within 72-hours of receiving your deposit payment (note that it may take five to seven business days for deposit refunds to appear back in your account). If your first choice tour dates are not available, but you have specified alternate tour dates that are available, we'll confirm your alternate tour dates within 72-hours of receiving your date-hold deposit payment. Your date-hold deposit is only refundable in cases where we are unable to confirm your first or second choice tour dates. Specifying an alternate tour start date (2nd choice tour dates) is optional, but encouraged if your group is available on multiple dates.
Paying Your Reconciliation Invoice To Confirm Your Multi-Day Tour Reservation: Your tour reservation will be considered tentative until full payment for your reservation is received. When we confirm that your requested tour dates are available, we'll also send a reconciliation invoice according to your group's headcount and the choices you make during the booking process; see tour pricing schedule below (your reconciliation invoice will be for the total due according to the number of people in your group, plus the cost of any customizations, minus the date-hold deposit you have already paid). If your tour dates are within 30-days of booking, you'll have 72-hours to pay your reconciliation invoice - failure to pay your reconciliation invoice within 72-hours of when the invoice was sent will result in cancellation of your reservation without refund, credit, or rescheduling allowance (you'll forfeit your entire date-hold deposit). If your tour dates are more than 30-days from booking, you must pay your reconciliation invoice at least 30-days before your tour start date - failure to pay your reconciliation invoice at least 30-days in advance of your tour start date will result in cancellation of your reservation without refund, credit, or rescheduling allowance (you'll forfeit your entire date-hold deposit).
Multi-Day Tour Cancellations, Rescheduling, & Refunds: Once paid, your date-hold deposit is non-refundable except in cases where we are unable to confirm either your first or second choice requested tour dates - see reservation and confirmation details above. Cancellation, rescheduling, and refund requests are subject to the policies specified in our Payment Terms & Conditions (please review these terms and conditions before paying your date-hold deposit).

Once your tour dates are confirmed, you will receive a reconciliation invoice according to your group size and the tiered pricing schedule above, plus any customizations you have requested during the booking process. Your reconciliation invoice will be for the total amount due according to the number of people in your group, plus any tour or lodging customizations you have requested, minus the date-hold deposit you have already paid. Our standard Payment Terms & Conditions apply to all sales/reservations.
Your multi-day tour reconciliation invoice will be based on the tiered pricing schedule above plus any customizations you have requested. A mandatory 18% non-refundable service gratuity is included for all multi-day tours. This gratuity is collected by BTK, and will be paid by BTK to your tour guide or workshop leader and service staff. At the end of your tour, you may elect to pay an additional service gratuity directly to your guide, however, doing so is optional, but encouraged for exceptional customer service. This requirement is in keeping with hospitality and service industry standards.
Our largest tour vehicle will accommodate up to 10 tour participants with luggage. We may be able to accommodate groups larger than 10 tour participants with luggage on your requested dates - inquire for a price quote.
A $250 per tour vehicle refundable security deposit for damage, excess wear, and/or excess cleaning is required for groups of six (6) or more, and for all bachelor/bachelorette parties of any size. If there is no damage or excess wear to our tour vehicle(s), and if no more than normal cleaning is required, BTK will refund your security deposit within 3-7 business days of your tour date.
If you elect to include our lodging, you’ll stay the night at an elegant oceanfront hotel located nearby the Valle de Guadalupe (standard rooms are mountain-view and include two double-size beds or one king-size bed; pricing is based on double-occupancy; beds feature luxury linens with duvet and feather-like pillows; air-conditioning, flat-panel television, phone, bottled water, and wi-fi in each room; full-service restaurant, rooftop bar, pool, outdoor hot tub, and spa are on-site; a complete Mexican/American hot breakfast buffet with coffee and juice is included at your hotel on day-2) | On day 1, you’ll enjoy our Ensenada Eats culinary tour, with all food and beverage as described in the itinerary above included. While on tour in the Valle de Guadalupe on day 2, all of your food and beverage as described in the itinerary above is included: visit two of Mexico's top boutique wineries and enjoy a complete premium wine tasting flight at each winery; nosh on select artisan cheeses and cold-pressed organic olive oil at one winery; and enjoy an expertly curated multi-course gourmet lunch overlooking the vineyards at one of Mexico's chic campestre-style eateries (tasting menu with share plates served family-style; non-alcoholic beverage included with lunch; wine and craft beer available for additional purchase at lunch) | Round-trip transportation in a well appointed air-conditioned tour vehicle from our designated border meeting point | Your bilingual culinary guide is a knowledgable ambassador of Northern Baja California's culinary scene | All itinerary times above, except the start time, are approximate, and vendors may be substituted based on their availability on the days of your tour.

From the U.S., you will meet your culinary tour guide on the U.S. side of the border at our designated border meeting point in San Ysidro, California (the Tijuana border crossing). It's an easy drive to this border meeting point (with paid secure parking nearby), or take public transportation (San Diego Trolley), taxi, or Uber.
TAKE NOTE BEFORE PAYING YOUR DATE-HOLD DEPOSIT
Once your tour dates are confirmed, date-hold deposits are non-refundable. Book early to confirm your tour dates - our tour dates are reserved and confirmed on a first-paid basis, and dates often sell-out well in advance. When scheduling conflicts occur, priority is given to the customer who pays first. This culinary wine tour is not advised for strict vegetarians or vegans. Every tour participant must be at least 18 years old and carry a valid passport and if applicable, a valid multiple-entry U.S. Visa or U.S. Resident Card - minors will not be allowed to participate. Everyone in your group must agree to and sign the Baja Test Kitchen Participation Agreement (release of liability) at least three (3) days prior to departure. BTK tours are 100% non-smoking/non-vaping. Tours run rain or shine. Please read our FULL Payment Terms & Conditions and Tour Policies before paying your date hold-deposit. Your date-hold deposit payment constitutes your full acceptance of the Terms, Conditions, and Tour Policies found on the Baja Test Kitchen website. Once paid, your date-hold deposit is non-refundable (except in cases where we are not able to confirm your requested tour dates) and rescheduling is subject to the policies and provisions for rescheduling found in our Payment Terms & Conditions. Failure to arrive at the designated meeting point on time will constitute your cancellation without refund, credit, or rescheduling allowance. We advise you to purchase third-party trip insurance to cover any tour or workshop cancellation losses related to your own trip interruption or rescheduling.
